                                                                     ZUCCHINI FRITTERS
                                                                           Serves 4

                                               INGREDIENTS                 METHOD

                                              •   2 large zucchinis, grated  1.   Drain grated zucchini of any moisture
                                              •   ¼ cup wholemeal flour  2.  Combine zucchini, flour, garlic and egg in
                                              •   1 clove garlic, minced  a large bowl. Season with desired herbs
                                              •   2 eggs                  and seasonings
                                              •   2 tbsp olive oil     3.  Heat olive oil in a large pan over medium
                                              •   Fresh herbs             heat. Scoop batter into pan and flatten
                                              •   Salt, chilli flakes, pepper  with spatula (~1cm thick) to cook evenly.
                                                                       4.  Flip to cook both sides until golden brown
                                                                       5.  Serve with salad or veggies and some
                                                                          meat for a balanced meal!

                   HEART-WARMING APPLE AND CINNAMON OATS
                                       Serves 1

          INGREDIENTS                      METHOD
        •   1 cup milk                1.   Add oats and milk into a pot over the
        •   1/2 cup oats                  stove on medium heat.
        •   1/3 cup water             2.  Stir until oats begin to become fluffy
        •   1 tbsp cinnamon               then add water, vanilla essence and 1
        •   1/2 teaspoon vanilla essence  tbsp cinnamon. Continue stirring.
        •   1 apple, cubed            3.  Add diced apple into a separate pan
                                          with a little olive oil. Add a dash of water
                                          to pan to simmer apple. Once water has
                                          evaporated, add cinnamon on top of
                                          apple, and stir with spatula until crispy.
                                      4.  Once oats absorb majority of the liquid
                                          and become thick and creamy, remove
                                          from heat! Add extra cinnamon if you
                                          wish and top with the apple. Enjoy!
